Vanilla & Date Energy Balls - Vegan.

On the weekend, I like to experiment with food. I have loved food for as long as I can remember, so to mess around with pots and pans, ... that's like my heaven on earth. Energy balls are one of my all-time favorite snacks. They're super yummy, give you a great boost of energy and they look aesthetic as well, don't you think? Getting hungry? Have a read!

What you will need:

  • 100 grams of pitted dates
  • 30 grams of cranberries
  • 40 grams of oats (any type of oats will do)
  • 2 tablespoons of agave syrup
  • 1 teaspoon of vanilla extract
  • cacao powder - coating

But... How?

  • Pulse together the dates and cranberries until you have tiny little pieces. Add the agave syrup and vanilla extract and let it pulse for about 30 seconds to a minute. The mixture will now stick together.
  • Add the oats. You will notice that the mixture will already start to form balls. Don't pulse for too long as you still want the oats to be pretty recognizable.
  • Form equal balls and coat them with the cacao powder.
  • These babies are ready to be devoured! This recipe makes about 8 medium-sized balls (but I already ate 2 before I even took a picture, so yeah...)

If you make these, feel free to tag me on Instagram, I'd love to see your end result!
