You've got some leftover zucchini and some fresh time in the garden? Let's go!
The Ingredients:
- 1 yellow zucchini (you can obviously switch for green zucchini)
- 1 big onion
- 2 sprigs of thyme
- pepper & salt
- dried (or fresh, but use less) oregano (to taste)
- 1 tomato, diced (garnishment)
The Directions:
- Dice your onion & zucchini, this doesn't have to be super small as we will puree the soup when it's finished.
- Free off your zucchini and onion in coconut or vegetable oil and let it soften completely. Add your 1 sprig of thyme as well.
- When the vegetables are soft, add boiling water until the vegetables are fully covered and let your soup simmer away for about 15 minutes, than puree.
- Add your oregano (I used about 1 tablespoon, but you can adjust to taste), the salt & the pepper.
- Enjoy your lovely soup! Don't forget to add some diced tomato: it looks & tastes really nice!
