Yellow Zucchini Soup (Vegan).

I love me some soup! Even when it's a hot day out, you can just never go wrong with soup. It's a super easy and nutritious dish and very easy to make in bulk and put in the freezer for later! Today, I'm showing you a yelow zucchini recipe which requires minimal ingredients but sure tastes amazing. Wanna have a read?

You've got some leftover zucchini and some fresh time in the garden? Let's go!


The Ingredients:


  • 1 yellow zucchini (you can obviously switch for green zucchini)
  • 1 big onion
  • 2 sprigs of thyme
  • pepper & salt
  • dried (or fresh, but use less) oregano (to taste)
  • 1 tomato, diced (garnishment)


The Directions:

  1. Dice your onion & zucchini, this doesn't have to be super small as we will puree the soup when it's finished. 
  2. Free off your zucchini and onion in coconut or vegetable oil and let it soften completely. Add your 1 sprig of thyme as well.
  3. When the vegetables are soft, add boiling water until the vegetables are fully covered and let your soup simmer away for about 15 minutes, than puree. 
  4. Add your oregano (I used about 1 tablespoon, but you can adjust to taste), the salt & the pepper. 
  5. Enjoy your lovely soup! Don't forget to add some diced tomato: it looks & tastes really nice!
