Vegan Berry-Chia Seed & Fig-Date Jams!

I do love my jam, with peanut butter, without peanut butter, on a rice cake, or even stirred throughout my yogurt bowl in the morning. Like I said, I LOVE it, but I absolutely hate the fact that where I live, you really can't find a low - or no added sugar version. So,... I decided to make my own! Wanna have a look?

Vegan Berry-Chia Seed Jam.

  • 250 grams of frozen or fresh berries
  • if using fresh berries: 1 tablespoon of water
  • 2 tablespoons of agave
  • 2 tablespoons of chia seeds.

How to?

  • Heat the berries on the stove until they are nice and soft. If you're using fresh berries, you will want to add 1 tablespoon of water, so your mixture can bubble away nicely.
  • Add your agave and chia seeds.
  • Let this simmer for about 10 minutes and puree your mixture if you want your fruit to be a bit smaller.
  • Transfer to some containers and be sure to let the mixture cool down before you transfer it to the fridge.

Vegan Fig & Date Jam.

  • 12 small, pitted dates
  • 1/2 cup - 1 cup of water (depending on how thick your mixture is)
  • 3 figs
  • 5 tablespoons of agave

How to?

  • Slice your dates & figs in small pieces, but be sure they're still recognizable when your mixture is ready.
  • Heat your figs and dates over the stove, add your agave and 1/2 cup of water and let this mixture bubble for 5 minutes. Turn down the heat after those five minutes and let your mixture simmer for another 15 minutes. If your liquid is absorbed before the 15 minutes have passed, add a bit more.
  • Blend your jam sligtly in the blender, transfer it to your containers and let cool before you transfer this deliciousness to the fridge.

And.... you're done! Once they're cooled down, you can enjoy them as a lovely spread or .... just eat them with a spoon... out of the jar!
